Mini Cheesecakes
This is a combination of various recipes I’ve tried. :)
It makes at least 50 mini cheesecakes (I think this batch made 54).
INGREDIENTS
Chocolate covered graham crackers (about 17~I used Keebler)
2 Tbsp melted butter
2 (8 ounce) packages cream cheese (room temperature)
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
½ cup milk chocolate chips
DIRECTIONS
Preheat oven to 350 degrees F°.
Line mini muffin pans with mini muffin paper liners.
Crush the chocolate covered graham crackers (I used a food processor) and add the melted butter.
Spoon a bit of the crushed cookie mixture in each mini muffin cup.
In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy and smooth (you do not want lumps in your batter).
Fill each mini muffin liner with this mixture, almost to the top.
Bake for about 15 minutes (keep an eye on them~they are done when the middle is still a little wiggly and before the top cracks).
Cool.
Melt the milk chocolate chips and drizzle across the tops of the mini cheesecakes.
Refrigerate until ready to eat!
**I have mixed this recipe up in the past by using mint chocolate cookies (like Girl Scout Thin Mints or Keebler Grasshoppers) for the crust and drizzling melted mint chips over the top. Ditto with peanut butter sandwich cookies (like Nutter Butters) and drizzling melted peanut butter over the top.

Those sound quite yummy Erin. I don't think I have ever seen chocolate covered graham crackers. Are they actual graham crackers covered in chocolate? Or are they chocolate through and through?
